Steps include freezing to solidify water, using a sealed vacuum chamber, lowering pressure for sublimation (solid to gas transition), condensing vapour into ice, and a final freeze for shelf-stability.
Result? Candy's original qualities preserved with less moisture, turning usually soft lollies into crunchy new treats! YUM!
